Cooking Preparation

Preparation Guide

  • In a non-stick pan, combine condensed milk and khoya (milk solids) over low heat.

  • Stir continuously to prevent sticking and cook until the mixture thickens and leaves the sides of the pan (approximately 10-15 minutes).

  • Add soaked saffron along with the milk, sugar, and cardamom powder to the mixture. Mix well.

  • Continue to cook for another 5-7 minutes until the mixture thickens further and forms a soft dough-like consistency.

  • Remove the pan from heat and allow the mixture to cool slightly.

  • Grease your palms with ghee (clarified butter) and take a small portion of the mixture. Roll it between your palms to form a smooth round pedha shape.

  • Repeat the process with the remaining mixture to form pedhas.

  • Garnish the pedhas with chopped nuts and gently press them onto the surface.

  • Allow the pedhas to cool completely before serving or refrigerate for a firmer texture.

Chef's Tips

  • Use a non-stick pan to prevent the mixture from sticking and burning.

  • Adjust the amount of sugar according to your preference for sweetness.

  • Soaking saffron in warm milk enhances its flavor and imparts a rich golden color to the pedhas.

  • Ensure the mixture is cooked until it reaches a soft dough-like consistency to easily shape the pedhas.

  • Store the pedhas in an airtight container in the refrigerator for up to a week.
