  • In a heavy-bottomed pan, bring the milk to a boil over medium heat, stirring occasionally to prevent it from sticking to the bottom.

  • Once the milk comes to a boil, reduce the heat and simmer for about 10-15 minutes, stirring frequently, until the milk reduces to about half its original volume.

  • Dilute the cornflour in 2 tablespoons of water to make a smooth paste. Add this paste to the simmering milk and continue to cook for another 5-7 minutes, stirring continuously, until the mixture thickens slightly.

  • Add the sugar, saffron strands, chopped pistachios, condensed milk, and cardamom powder to the milk mixture. Stir well to combine.

  • Cook the mixture for an additional 2-3 minutes, allowing the flavors to meld together. Remove the pan from the heat and let the mixture cool to room temperature.

  • Pour the cooled mixture into kulfi molds or small glasses. Cover with aluminum foil or plastic wrap and insert a popsicle stick into each mold.

  • Place the molds in the freezer and let the kulfi freeze for at least 6-8 hours or overnight until completely set.

  • Once the kulfi is set, remove it from the molds by dipping them briefly in warm water. Serve the Kesar Pista Kulfi chilled, garnished with additional chopped pistachios if desired.

  • Soak the saffron strands in 1 tablespoon of warm milk for 10-15 minutes before adding them to the mixture to enhance their flavor and color.
